Is there a way to change the email that comes from *mailman**-bounces*@...? I want to change the -bounces or remove it completely.
Also prefer to use /*-unsubscribe* /instead of */-leave/*, to unsubscribe a member, is that possible?

That address with the -bounces suffix is required for automated bounce processing. Without the -bounces suffix, bounces would go to the list. You wouldn't want that.
You might want to set General Options -> include_sender_header to No so brain dead MUAs like Outlook don't misuse it.

If you want to change -bounces to -admin (a synonym for -bounces in MM 2.1, but not MM 3) in the envelope sender, you'd need to modify the source code.
If you mean you would like to change -leave to -unsubscribe in the List-Unsubscribe: header, again you'd need to modify the source code.
I really think your objection to -bounces would be removed if you set General Options -> include_sender_header to No.
