There is a MachNumber field in yt. You can access it the same way as Density or any other available field. I suggest you check the documentation for a complete list of fields: https://yt.readthedocs.org/en/latest/field_list.html You can can find more information about how the fields system in yt works here: https://yt.readthedocs.org/en/latest/analyzing/objects.html This includes a description of how to add your own fields if what you need is not in yt.
