Hello Hugo,

>everyone is à-la-carte.
When we organized the Tryton Unconference in Liège I was in charge of
the suppers. We were around 35 people three nights in a row so just
like you I selected the places mainly on their capacity to handle a
large number of people.
We were lucky because they usually gave us 5 dishes to choose from in
the menu (4 traditional dishes, 1 with fish, no vegan (but it was not
an issue)). If you can, propose more than 1 dish because there will
always be people that don't eat pork or beef or whatever.
>I would like to offer an option to book the dinner in advance, with a
>chosen menu and a platform such as Eventbrite to book the dinner. I
>have never done this before, does it look like a smart move ?
>Eventbrite or an alternative ?
For the unconference we used http://ti.to after having used eventbrite
for the previous conferences. We were pretty happy about it because it
integrated smoothly in our website, also eventbrite was linked to
lanyrd but it was a PITA because lanyrd was discontinued and nobody
reacted to our requests.
Moreover, ti.to provides receipts for the people that wish to have
one. And it was also a process that we had to do afterwards so having
ti.to handling it was a very nice feature.
And ti.to is Free for charity events and take only a fee of 1% for
Community/Non-profit events. You might want to check if it suits your
need.
My 2¢,
