[docs] Incorrect pickle Documentation

Pickle, by default, uses the ascii encoding, but it is changeable.
 However, this is not mentioned in the documentation.  (The option is
pickle.pickle(obj, encoding="utf8") and I'm not sure if it is present in
other functions/classes in the pickle module)
