This has been discussed many times on this and the Mailman-Developers

In particular, see the "Sender field" thread at

The fear is that older/broken MTAs and perhaps autoresponders will
return bounces/autoresponses to the Sender: rather than the envelope
sender (or From: in the case of autoresponders), thus breaking bounce
processing from those MTAs and possibly posting bounces/autoresponses
to the list.

It seems that this may not be as big a problem as it once was, and this
might change in Mailman 2.2.
