If you really need that, you can make some ProjectXxxGroup pages and put 
ACLs on the project pages.

Be aware that it is more the wiki way to let it world writeable and just 
revert unwanted changes.

Everything in cache/ can (and will) be automatically rebuilt. So you 
only need to save text/ and pages/ (attachments) and maybe backup/ (old 
page versions). Also editlog and user/ if you want to reproduce who did 
what.
