What you want is an "SMTP proxy" that does probabilistic (in some cases
erroneously called "Bayesian") spam detection. See
http://assp.sourceforge.net

There is also an SMTP proxy module you can add to PopFile, which like
SPamBayes, is normally a POP3 proxy:
