Not necessarily.  If you're happy with the results, then you can stop.  You
might need to start up again in the future, if you ham/spam changes
significantly.

No.  Messages are only kept in the cache for a set number of days (defaults
to 7) and after that they are permanently removed.  You can also turn the
cache off completely, if you like, or turn off caching large messages, or
messages that identify themselves as 'bulk' (mailing list traffic, for
example).  All these options should be on the configuration page(s).
