Yes, it works.  I'm using the sb_server.py (I have 3 email  address from 
3 different ISP) with no problem.
The only difference is that you will have to use different ports to talk 
to the pop3 proxy for each of you email account. (See documentation on 
www.spambayes.org)

If you are using the Outlook  plugin then I don't know but it should 
work since it is outlook who retreives the mail and spambayes analyse
the email.
