Which GUI? And what do you want to know? 
How to program it or how top use it?

Generic X Windows? - The O'Reilly series is very comprehensive
with both programming and user guides.

GNOME/GT/K - There are a couple, I think Coriolis(sp?) do one
KDE/Qt - Wrox press do a couple

Then there are the other toolkits like wxWindows, Tk, 
Lesstiff, Interviews, etc etc.

Depends what you want.
