There're a few things wrong with that command line.

First, you'd probably have to quote the special characters, ", <, and >.

Second, with "-r -" you specify that add_members will read the addresses
of the members to add from standard input.

I.e. you could try something like
  echo '"firstname lastname" <user at domain.example>' |
    add_members -r - listname
