Then Postfix is probably your best option.
Important things:

a) fast disks
b) fast disks
c) did I mention fast disks?
d) A sane filesystem (ext3? ext2? XFS? RAMFS?)
e) A good filesystem layout (see http://www.stahl.bau.tu-bs.de/~hildeb/postfix/ext3.shtml)
f) http://www.stahl.bau.tu-bs.de/~hildeb/postfix/bottleneck.shtml
g) async syslogd logging
